From sweet potato casserole to butternut squash and peas (not to mention roasted carrots and cranberry sauce), there are plenty of ways for fruits and vegetables to make an appearance on the Thanksgiving table. But when it comes to hearty side dishes that can make or break the meal, two stand out amongst all others: <a href=\"https:\/\/golf.com\/lifestyle\/food\/5-keys-to-showstopping-stuffing\/\">stuffing<\/a> and mashed potatoes.<\/p>\n\n\n\n<p>\u201cMashed potatoes really say a lot,\u201d says Kevin Humphreys, the executive chef at <a href=\"https:\/\/tributaryidaho.com\/\">Tributary<\/a> in Driggs, Idaho. \u201cIt\u2019s a comfort food, and it\u2019s probably one of the first dishes that comes to mind when you think of a home-cooked meal.\u201d<\/p>\n\n\n\n<p>While it may seem an easy task to produce a bowl of truly delectable mashed potatoes, the truth is, five-star mashed potatoes are whipped up only with an unwavering attention to the details. According to Chef Humphreys, Idaho Russet potatoes are the best for mashing. \u201cThey whip up nice and fluffy due to their high starch content and low moisture,\u201d he explains. Yukon Gold potatoes are his next go-to, thanks to their \u201cnatural buttery flavor, golden color, and medium starch content.\u201d<\/p>\n\n\n\n<p>In either case, just make sure to first cut the potatoes into uniform pieces, which ensures that they\u2019ll cook evenly.<\/p>\n\n\n\n<p><strong>Simmer Down<\/strong><\/p>\n\n\n\n<p>The biggest pitfall that dooms most home cooks\u2019 attempt at great mashed potatoes is cooking them in boiling water, which is a surefire way to ensure that the potatoes are overcooked before they\u2019re mashed. \u201cBoiling is a very harsh and aggressive style of cooking,\u201d says Humphreys, who explains that boiling water actually pulls the starch out of the vegetable, and the lack of starch produces a gluey finished product.<\/p>\n\n\n<section class=\"g-block g-block-article-embed g-block-article-embed--align-right\">\n    <figure>\n\n        <div class=\"g-article-embedded__img-wrapper\">\n                                            <div class=\"article__category lifestyle food\">\n                    <a href=\"https:\/\/golf.com\/lifestyle\/food\/\">\n                        Food                    <\/a>\n                <\/div>\n                        \n            <a href=\"https:\/\/golf.com\/lifestyle\/food\/how-to-cook-a-perfect-thanksgiving-turkey\/\">\n                <img decoding=\"async\"\n        class=\"lazy inner\"\n        src=\"https:\/\/golf.com\/wp-content\/uploads\/2021\/11\/roast-turkey.jpg?width=30\"\n        alt=\"Roast turkey\"\n        data-src=\"https:\/\/golf.com\/wp-content\/uploads\/2021\/11\/roast-turkey.jpg\"\n        data-srcset=\"https:\/\/golf.com\/wp-content\/uploads\/2021\/11\/roast-turkey.jpg?width=300 300w, https:\/\/golf.com\/wp-content\/uploads\/2021\/11\/roast-turkey.jpg?width=720 600w, https:\/\/golf.com\/wp-content\/uploads\/2021\/11\/roast-turkey.jpg?width=1280 900w\"\n        sizes=\"(max-width: 300px) 100vw, (max-width: 600px) 50vw, (max-width: 900px) 33vw, 900px\"\n        \n      \/>            <\/a>\n        <\/div>\n        <figcaption>\n            <blockquote><a href=\"https:\/\/golf.com\/lifestyle\/food\/how-to-cook-a-perfect-thanksgiving-turkey\/\">How to cook a perfect Thanksgiving turkey, according to a 3-star Michelin chef<\/a><\/blockquote>\n                <span class=\"author \"><span>By:<\/span>\n        <span class=\"author__inner\">\n                    <a href=\"https:\/\/golf.com\/writers\/josh-sens\/\">\n                Josh Sens            <\/a>\n            \n                            <\/span>\n    <\/span>\n        <\/figcaption>\n    <\/figure>\n<\/section>\n\n\n<p>Instead, in a large pot, cover the potatoes with water, then cook them over medium heat, only bringing the water to a simmer. Once it\u2019s simmering, turn the temperature down to low. \u201cThis sets the starch inside the potato,\u201d the chef says, \u201cso that when you do emulsify the butter into it, the potato whips up in a pleasingly fluffy way.\u201d<\/p>\n\n\n\n<p><strong>Tools of the Trade<\/strong><\/p>\n\n\n\n<p>While it may seem counterintuitive, the best mashed potatoes don\u2019t require a traditional masher. Instead, use a potato ricer or a food mill, which renders the potatoes into a much finer consistency. According to Humphreys, that goes a long way toward improving the end result. (Incidentally, a food mill or ricer also makes it easy to separate the flesh of the potato from the peel, assuming you first cook the potatoes with the skin on.) \u201cYou get a really fine texture,\u201d the chef explains. \u201cSo when you add the butter and then the dairy, you don\u2019t get what I consider to be a bad mashed potato that has lumps. It alleviates all of that.\u201d<\/p>\n\n\n\n<p><strong>One-Two Punch<\/strong><\/p>\n\n\n\n<p>It goes without saying that the best mashed potatoes are laden with two things: butter and dairy. There\u2019s no hard and fast rule about how much of those two ingredients you should add, but Chef Humphreys has found that when making mashed potatoes using Idaho Russets, six pounds of potatoes are balanced by three-quarters of a pound of butter and one cup of heavy cream. If he\u2019s mashing Yukon Golds, Humphreys likes to start with nine pounds of potatoes, then adds three-quarters of a pound of butter, 2 cups of heavy cream, and 3 cups of sour cream.<\/p>\n\n\n\n<p>Make sure the butter is melted and the cream is warm, and start by mixing in the butter, using a whisk to fully emulsify the two. Then do the same with the cream \u2014 making sure that both the cream and the butter are warm is a crucial step in the process. \u201cThings go together when they\u2019re the same temperature,\u201d the chef says.<\/p>\n\n\n\n<p><strong>Creative Control<\/strong><\/p>\n\n\n\n<p>Once you have the basics down, there\u2019s a seemingly endless array of options for unique twists on the classic.
